Petra: Hallo, Birgit!

Birgit: Hallo, Petra! Wie geht es dir?

Petra: Gut. Ich gehe jetzt in unsere Kantine. Bist du schon dort gewesen?

Birgit: Noch nicht. Gehen wir zusammen hin. Dort können wir in Ruhe plaudern.

Petra: OK. Also, was wollen wir heute essen… Ich möchte unbedingt eine Suppe nehmen. Meine Lieblingssuppen sind Pilz- und Gulaschsuppe.

Birgit: Ich esse sehr gerne Hühnerbrühe mit Gemüse und Nudeln und auch kalte italienische Tomatensuppe mit Knoblauch.

Petra: Diese Suppen sind auch lecker. Und heute bietet man uns nur Fischsuppe aus Lachs mit grünen Bohnen und Salzgurken. Ich probiere, die Suppe muss nicht schlecht sein.

Birgit: Und ich will keine Suppe. Heute möchte ich einen leckeren Salat essen. Also, was gibt es hier: Frühlingssalat aus saisonalem Gemüse, Thunfischsalat, Salat mit Hühnerfleisch und Kohl, Salat mit Meeresfrüchten, Fruchtcocktail. Also, ich nehme den Salat mit Meeresfrüchten und den Fruchtcocktail zum Nachtisch.

Petra: Hauptgerichte bereitet man hier immer gut zu. Heute nehme ich gegrilltes Hühnerfilet mit Basilikum und gegrillten Tomaten. Gestern habe ich hier Rindfilet in Zwiebelsoße bestellt. Rindfleisch war so zart und würzig! Ich würde dieses Gericht heute auch nehmen. Leider fehlt es in der Speisekarte.

Birgit: Ich möchte heute beim Fisch bleiben. Nach dem Salat mit Meeresfrüchten esse ich gerne diese gebratene Seezunge mit Kartoffelpüree und Blumenkohl. Fischgerichte schmecken mir üblicherweise am besten. Fleisch esse ich nicht so gern.

Petra: Ich esse alles. Wichtig ist nur, dass es gut gekocht ist.

Birgit: Zum Nachtisch esse ich meinen Fruchtcocktail. Und wofür wirst du dich entscheiden? Hier gibt es tolle Kuchen mit verschiedenen Füllungen. Auch Pfannkuchen mit Schokolade und Eis schmecken perfekt.

Petra: Ich nehme heute Eis mit Erdbeeren und Schlagsahne.

Birgit: Gute Wahl. Und wahrscheinlich zwei «Espresso» für uns beide?

Petra: «Espresso» trinken wir unbedingt. Er macht uns wieder munter nach dem Mittagessen. Über Mineralwasser ohne Gas dürfen wir auch nicht vergessen. Ich habe großen Durst und möchte gerne ein Glas Wasser vor dem Mittagessen austrinken.

Die deutsche Küche ist sehr lecker und sättigend, und jede Region des Landes hat eigene Spezialitäten. Aber zu Weihnachten bereitet man ganz bestimmte Speisen zu, die landesweit bekannt sind. Am Heiligabend ist es üblich, Fisch anzurichten. Fisch ist ein altes christliches Symbol, und obwohl viele Leute heutzutage sich kaum zu den Gläubigen zählen, bleibt immerhin diese Tradition. Zu dem Fischgericht serviert man sehr oft Kartoffelsalat.

Am 25. Dezember essen viele Familien eine Weihnachtsgans mit Rotkohl und Klößen. Viele Hausfrauen haben ein eigenes Rezept, aber besonders bekannt ist es, die Gans mit Äpfeln und Backpflaumen zu füllen.

Auch das Weihnachtsgebäck ist abwechslungsreich und köstlich. Besonders beliebt ist Stollen, das ist ein Kuchen mit Rosinen, Mandeln und vielen Gewürzen, wie Nelken, Zimt und Vanille. Der Kuchen hat eine Zuckerglasur. Das Rezept wurde im 14. Jahrhundert erfunden, und seitdem ist der Weihnachtsstollen die „Visitenkarte“ des Feiertags. Es ist auch gebräuchlich, Plätzchen und Pfefferkuchen zu backen. Ein selbstgebackener und schön bemalter Pfefferkuchen ist ein gutes Geschenk!

Was die Weihnachtsgetränke betrifft, so gibt es hier keine bestimmte Tradition. Auf dem Weihnachtsmarkt trinkt man gern Glühwein, aber auf dem Festtagstisch sind oft Wein und Bier zu sehen.

Schwarzwälder Kirschtorte

You’ll find lots of cakes and tarts to tempt you in Germany, but few people can resist a huge slice of Germany’s most famous cake: the delicious Schwarzwälder Kirschtorte (which literally means ‘Black Forest cherry torte’).

This dessert gets its name from Schwarzwälder Kirschwasser, a liqueur distilled from tart cherries. Interestingly, German law actually mandates that Kirschwasser must be present in the cake for it to be labeled a Schwarzwälder Kirschtorte.

Alternating layers of rich chocolate cake, cherries, and whipped cream are topped off with more cream, maraschino cherries, and chocolate shavings for a luxurious finish.

Wurst

Let’s start with an obvious one – Wurst. There are an estimated 1,500 varieties of sausage in Germany. These are prepared in many different ways and include a range of ingredients and unique spice blends. You will find these on street stalls almost everywhere across the country.

One of the most popular varieties is Bratwurst, a pan-fried or roasted sausage made from veal, beef, or pork. Others include Viennese Wiener (which is smoked and then boiled) and blood sausages, such as Blutwurst and Schwarzwurst.

You will also find regional specialties such as Berlin‘s Currywurst (with curried ketchup on top) and Bavaria’s Weisswurst, a white sausage that you peel before eating with sweet mustard.

Meanwhile, Nuremberg is famous for its grilled Rostbratwurst, which people eat with fermented shredded cabbage (sauerkraut). And in the state of Thuringian, the local Rostbratwurst is made using distinctive spices like marjoram and caraway.

11. Saumagen

Made from the ‘sows stomach’ literally, Saumagen is a tasty dish made more popular by German Chancellor Helmut Kohl. It was his favorite typical dish that was even served to his visiting dignitaries, including Mikhail Gorbachev, Bill Clinton, Margaret Thatcher, and Ronald Reagan.

This sausage somehow resembles Scottish haggis. It involves stuffing potatoes, pork, carrots, marjoram, onions, nutmeg, and white pepper in the stomachs of a pig casing, but on rare occasions, on artificial casings.

The sausage is then diced and roasted in an oven or pan-fried. This goes well with sauerkraut, a glass of dry white wine from Palatinate, or a traditional wheat beer from Bavaria.

Kartoffelpuffer

What a fantastic word! Perfect to enjoy as either a side dish or a light snack, Kartoffelpuffer are shallow pan-fried pancakes made from grated or ground potatoes mixed with flour, egg, onion, and seasoning. You can top them with a variety of sweet or savory condiments, such as sour cream, cottage cheese, apple sauce, or cinnamon.

Eintopf

A steaming bowl of Eintopf will warm anyone up on a cold day. The name of this traditional German stew literally means ‘one pot’ and refers to the way of cooking rather than its contents. That said, most recipes contain the same basic ingredients: broth, vegetables, potatoes or pulses, and pork, beef, chicken, or fish.

Eintopf is similar to Irish stew and you will find many different regional specialties throughout Germany. These include Lumpen und Flöh (which means ‘rags and fleas’) in the Kassel area and Linseneintopf (lentils) in Thüringen.

Full of flavor and heart-warming goodness, it’s no wonder this tasty dish is one of the most popular German foods.

Баварские колбаски Wollwurst

Название блюда дословно переводится как «шерстяная колбаса». И действительно, рецептура его приготовления тесно связана с шерстью, точнее, с войлоком. Секрет удивительного сочетания нежного мяса и овечьей шерсти будет раскрыт дальше.

В разных регионах страны его готовят по-разному, например, используются другие виды мяса и специи. Сегодняшний рецепт блюда немецкой кухни – типично баварский. Бессменная общая черта Wollwurst – отсутствие оболочки, благодаря чему именно этот вид сосисок из всего обилия рецептур наиболее легко воспроизводим в домашних условиях.

Основные ингредиенты:

  1. Мякоть свинины – 400 грамм.
  2. Шкура свиная – 80 грамм.
  3. Телятина – ½ килограмма.
  4. Лук репчатый – 150 грамм.
  5. Зерновая горчица – 2 чайные ложки.
  6. Кориандр – 1 чайная ложка.

Шварцвальдский вишневый торт / Schwarzwälder-Kirschtorten

Один из самых известных десертов в стране. Рецепт его приготовления появился еще в начале прошлого века. Один из знаменитых кондитеров Баварии приготовил шоколадные пирожные и в качестве украшения использовал вишню и сливочный крем. После этого угощение полюбилось многим жителям, а рецепт распространился по всей стране, а к середине 20 века о нем стало известно во всем мире. Главными его компонентами выступают пропитанные ликером бисквитные коржи, взбитые сливки, вишни и тертый шоколад. Своему названию он обязан расцветкой – белый, коричневый и черный считаются цветами национального одеяния жителей горного Шварцвальда.

Штоллен / Stollen

Без этого десерта не обходится ни одно Рождество. Представляет собой кекс, в составе которого присутствует множество специй, пряностей, орехов, изюма. Сверху сладость украшена сахарной пудрой. Такое оформление ассоциируется у немцев с новорожденным Иисусом, завернутого в белую пеленку.

Самый первый раз такой кекс приготовили еще в начале 14 века. Рецепт многими воспринялся неоднозначно и вызвал немало критики. Чтобы впечатлить требовательных жителей, было недостаточно использовать лишь муку, овес и воду. После первой неудачной попытки было принято решение добавить еще один ингредиент – сливочное масло.

Сегодня в заведениях страны предлагают отведать кексы с разными начинками. Наибольшей любовью среди туристов пользуется Дрезденский штоллен – именно так называют рождественский кекс. Отличительной и уникальной особенностью угощения является то, что только через 2 недели после выпечки его вкус полностью раскрывается.

Бретцель / Brezel

Немецкий крендель, который особенно полюбился жителям южных регионов страны. Такие булочки начали готовить еще с 13 столетия

Соблюдению рецепта и технологии выпекания уделяют особое внимание. В данном случае рецептура и форма имеет строгий регламент

По форме угощение напоминает сложенные на груди руки во время молитвы. В качестве декора используется крупная соль. Брецель готовят с колбасой, сыром, тыквенными семенами и другими начинками. Перед выпеканием крендель смачивают натриево-щелочном растворе, и только потом отправляют в печь.

Баумкухен / Baumkuchen

Название переводится на русский, как «дерево-пирог», и объясняется необычным способом приготовления. Деревянный валик обмакивают в тесто, после чего подрумянивают. Такая процедура повторяется несколько раз. На готовом угощение в разрезанном виде можно увидеть годичные кольца, как на спиле дерева.

Рецепт приготовления появился достаточно давно и распространен в других европейских странах. До сих пор остается неизвестным, когда и кто же именно в Германии придумал десерт, но в поварской книге, которая была выпущена еще в конце 17 столетия, рецепт этого пирога уже был. Сегодня Баумкухен считается обязательным рождественским десертом.

Еще один вкусный десерт, без которого не обходится ни одно Рождество в стране. Начиная с осени, на прилавках магазинов появляется известная выпечка в виде звездочек. Ее аромат никого не оставит равнодушным. В качестве основных ингредиентов выступают яичные белки, сахарная пудра, миндаль, корица и цедра лимона. Традиционное немецкое блюдо появилось в Швабии. Еще в середине 12 века обитатели одного из храма в честь завершения поста спекли печенье шестиконечной формы. Сегодня эту популярную сладость можно купить в любом супермаркете или же на рождественских ярмарках.

Суфле Шоколадные поцелуи / Schokoküsse

От этого десерта без ума все сладкоежки. Его рецепт принадлежит одному датскому кондитеру. Первый раз в Германии о нем стало известно в конце позапрошлого века. На то время сладость выпекалась в виде круглой вафли, которую украшали взбитые белки и растопленный шоколад. Изначально его называли «Поцелуем негра», но со временем решили придумать более политкорректное наименование. Сегодня лакомство производят сразу несколько торговых марок, но самой популярной считается Super Dickmann’s.
